“Mac n cheese, please. Every day, please. For the rest of my life, please.” He’s almost two. And he’s never said those words exactly…yet. But, I know they are exactly what he means! My son is addicted to mac n cheese. It’s like the only thing he wants to eat lately.
Now, to be fair he does love his fruit. But even that can change from week to week. Last week he loved cuties. He couldn’t get enough of those little baby oranges. I’m telling you, he was shoving whole hands full of those slices into his mouth. While I’m freaking out that he is going to choke! But this week…nope. Not a one. Won’t touch them. Same goes for the vegetables, but it’s worse. He may try one bite then he’s like… “Naaaaa….thanks, but a big NO THANKS! Just go find some more of that mac n cheese, Mom!”
So how does a mom sneak vegetables into a toddler’s diet? Anyone? I think I may have found the answer! The other day I was shopping at our Kroger grocery store picking up some organic bread in the freezer section. I looked up and what did my eyes see? Chocolate Muffins!
I know what you are thinking? Chocolate muffins are not vegetables. But guess what?! The first two ingredients in these chocolate muffins was zucchini and carrots! *insert church choir singing* The chocolate ones looked so good but so did the Blueberry Oats. So I grabbed a box of both!
These fabulous muffins are from Garden Lites and my little guy loves them! Besides being full of veggies, these muffins are also gluten-free, dairy-free and nut-free. Plus they come in individual wrappers so I can take them on the go.
