I made this recipe last night and it was a big hit with the family. I loved that everyone enjoyed a comforting, healthy meal and I was out of the kitchen in less than 30 minutes! 😉

Cheesy Broccoli, Chicken and Rice Casserole
Prep and Cook Time: 15 minutes
- 1 tablespoon unsalted butter
- 1 pound uncooked chicken tenders- diced into cubes
- 2-3 cups fresh broccoli crowns- chopped
- 1/2 onion- diced small
- 1 can of cream of chicken soup
- 1/3 cup water
- 6 oz. shredded cheddar cheese
- 2 cups of cooked white rice
- salt and pepper to taste
Cook your rice according to package directions. Set aside.
In a large skillet over medium heat, add the first four ingredients (butter through butter) and saute until chicken is almost cooked.
Add in the next three ingredients (soup, water and cheese) and gently mix until well incorporated. Simmer for a few minutes. Add salt and pepper to taste.
To assemble, place a scoop of rice and then top with a cup of the cheesy chicken broccoli mixture. Enjoy!
