Now that I’m pregnant with my second child, I’m trying to eat lots of clean and natural foods. One of my favorite snacks that’s low in calories but big on taste is my Cottage Cheese on Toast with Avocado and Tomatoes.
This quick and healthy snack is perfect anytime you want to satisfy a hungry tummy. It’s packed with protein, fiber and healthy fats that will keep you going throughout the day. The other reason I love this healthy snack is because it of all the layered goodness on top of the cottage cheese. I absolutely love avocados! When I was pregnant with little man I ate one almost every day. I was a little surprised when he was born that he wasn’t a giant avocado! 😉 The tomatoes on top add nice color and they give a sweetness to the whole mixture. A little salt and pepper to bring the whole thing alive and you my dear are set to enjoy!

Cottage Cheese on Toast with Avocado and Tomatoes
Prep Time: 5 minutes Total Time: 5 minutes
- 1 cup cottage cheese (I used Daisy Cottage Cheese 2% low-fat)
- 2 slices of whole wheat bread, toasted
- 1/2 of a ripe avocado, sliced
- 1/2 of a tomato, sliced
- salt and pepper, to taste
Lay your bread slices out and top each slice with 1/2 cup of cottage cheese. Sprinkle with salt and pepper to taste.
Top the cottage cheese with your sliced avocado and tomatoes. Sprinkle again with just a tiny pinch of salt and pepper. Enjoy!
