We have one meal left over for this week because the Quinoa Burritos recipe makes a lot!! We ended up ending those for 3 meals!! But no one was complaining and it’s a yummy way to stretch the budget!!
Our menu for this week is as follows:
Monday: Black Bean Cakes w/ Brown Rice and Broiled Tomatoes w/ Goat Cheese
Tuesday: Cheddar Burgers w/ Dilled Potato Salad
Wednesday: Baked Penne w/ Ricotta and Spinach and Garlic Bread and Veggies
Thursday: Beef Tostadas w/ Guacamole and Salsa
Friday: Dinner Out!!
Saturday: Beef Fried Rice w/ Broccoli
Sunday: Broccoli Mini Quiches
Dessert this week: Chocolate Chip Cookies
This week was a good shopping week. I was able to purchase a lot for a little!! All thanks to Huggies. A few weeks back I won a $25.00 MasterCard gift card with their Enjoy the Rides Rewards Program. And my card arrived last Friday, so I decided to take it shopping with me today.
Today I spent a total of $ 36.27 for a weeks worth of groceries. My groceries this week without my gift card, coupons, and discounts would have been $104. 02!! That’s a savings of $ 67.75!! What a nice way to start the week!!
