I was talking with one of my friends who just recently was at our home for a lovely visit. And she was telling me how every Sunday at her home is when she cooks with her crock pot! And when she said that something inside my brain just clicked! I thought maybe I should do that too!
So today, I am starting a new tradition on Inspiration For Moms. It’s called Slow Cooker Sunday. And basically what it means is that each Sunday I will be sharing a slow cooker recipe with you.
Who knows…maybe you too, will have a new Sunday tradition at your house! (Thanks, N. for the idea!!)
Prep Time: 15 minutes
Cook Time: 4 hours
2 cups shredded cheddar cheese, divided
1/2 tablespoons cornstarch
4 boneless, skinless chicken breasts
1 10-ounce package of frozen chopped broccoli
1/2 white onion, chopped
1/2 cup chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup brown rice, uncooked
1) Toss together half the cheddar cheese and the cornstarch; set aside.
2) Place chicken, broccoli, onion, broth salt and pepper and the cheddar cornstarch mixture into the slow cooker. Cover and cook on LOW for 4 hours.
3) Cook rice according to package instructions. Remove lid on slow cooker and sprinkle in remaining cheddar cheese and a little more salt and pepper. Wait for the cheese to melt a bit. Then serve with rice. Enjoy!
